Cut the veggies and keep aside

Heat oil in a kadai add jeera when it crackles add the sliced onions (leave 1/4 cup onions for adding later) fry till golden brown. Then add the veggies and ginger garlic paste mix and saute for few mins. Then add dhania powder, jeera powder, kitchen king masala, kashmiri red chilli powder, crushed kasuri methi and salt mix well. Cover and cook on medium flame till the veggies are 3/4 cooked

Then add the remaining 1/4 cup onions and sliced tomatoes mix well. Cover and cook on medium flame till done. Sprinkle some chopped coriander leaves. Serve with phulkas, bread or pooris
