Heat oil in a thick bottom/nonstick pan and splatter cumin seeds.

Add whole spices, then add chopped onions and fry them on medium flame, till light golden brown.

Add ginger garlic paste and sauté well.

Add chicken pieces, turn the flame to high and mix them well.

When chicken starts getting brown, sprinkle turmeric, dhania powder, chilli powder and salt.

Add green chillies and tomatoes, leave it for a couple of minutes till tomatoes starts releases water.

Now mix all well and let the chicken cook on high flame, stirring often.

Now add little water and lower the flame.

Boil methi leaves for 5 minutes in another pan.

Now add methi and dhania in chicken, keeping the flame high.

Mix everything gently and turn the gas to medium sim.

Cook uncovered (very important, to retain the green colour) for 6-8 minutes.

The water/juices from methi and dhania will dry up, oil will again separate and the chicken will be cooked by this time, also the greens will coat the pieces.

Serve hot methi chicken with Roti or rice.
