Steps

Prick aloo, toss them with lil salt.

Take a wok, add oil, heat it. Moderate the flame, fry aloo until light brown. Take out in a bowl, keep aside.

Now add whole Garam Masala in the same hot oil, saute it for a sec, do not over cook it. Add hing & zeera, let it splutter.

Now add ginger paste, saute it until rawness is released. Add very lil water to avoid burning.

Mix all the powdered masala with lil water, add in the masala, mix it well. Add lil water, cook it until oil has surfaced.

In goes tomato puree & salt, mix it well. Lower the flame, cover it with the lid, cook it until oil has oozed out.

Open the lid, increase the flame, add fried aloo, stir fry it for a minute.

In goes kaju paste & sugar, mix it well.

Add fresh cream, mix it well. Cook it covered on low flame until oil has oozed out.

Now add 1 cup boiled water, mix it well. Give a boil.

Lower the flame, cover it with the lid, cook it until saucy. Turn off the flame, open the lid after 5 minutes.

Take out in a serving bowl, garnish it with dhania patta.
