A surprising and delicious appetizer for a festive occasion.

Heat the cream, then add the foie gras cut into pieces and let it melt.

Remove from heat, add the egg yolk, and season with pepper. Blend until smooth.

Place a little fig jam in the bottom of each ramekin, pour the mixture on top, then bake for 45 minutes at 210°F (100°C).

Let cool to room temperature, then refrigerate for at least 3 hours. If the custard seems runny after baking, don't worry—it will set in the fridge!

Sprinkle brown sugar on top and caramelize quickly with a kitchen torch so the custard doesn't melt. Refrigerate again until ready to serve.
