Ingredients

Crockpot simmer, 2 days or less
2 people, 2 dinners
  1. 2 poundslamb shanks (4 shanks)
  2. 1small peeled and quartered onion
  3. 1/2 cupcured olives
  4. 1/2 cupsliced carrot
  5. 1/2 cupsliced celery stalk
  6. 1/2 cupminiature potato
  7. 2 Tbsolive oil
  8. 1 Tbseach paprika powder
  9. 1 Tbsgranular garlic
  10. 1 Tspblack pepper
  11. 1 Tspall purpose flour for gravy
  12. Fresh mint garnish
  13. Equipment: cast iron skillet, crock pot
  14. Cost: lamb shanks $4 a pound, other $2, $5 per dinner

Steps

Crockpot simmer, 2 days or less
  1. 1

    Marinade shanks in milk overnight. Rinse, dry, brown lambshanks in olive oil with red paprika, garlic, pepper in 2 Tbs olive oil. Make bed of vegetables and cured olives in bottom of crockpot, lay shanks on top. Turn to low cook.

    Dispose of bones in garden digester. Serve meat and vegetables on platter. Mix gravy from crock pot with tsp of flour, serve on the side. Sprinkle fresh mint over meat. Enjoy.
