Biryani is always thought to be a spiced colourfull, savoury dish yet now a new version of White Biryani is talk of town which is plain in colour,mild in spice,melting flavours, but it has gained lot of favouritesome recently.It can be made with with any beef,mutton,chicken or even seafood.I have followed food fusion recipe with little changes from my side.For the picture I have placed my dish at kitchen counter because there is a window here at right side with perfect natural light.The time of picture lies between 1 and 2 pm in afternoon just before having lunch.White biryani has quite different taste from regular biryanis but its truly awsome to have simple mild flavours blending together so well.Enjoy 😋😋

Heat oil in a pot.add chicken and fry it till colour changes.add whole garam masala and fry.

Add ginger garlic paste,sliced onion,chopped green chiliies and let it cook till onions are pink.mix white pepper,black pepper,mace powder,nutmeg powder,salt in curd and whisk well.add in chicken and let it cook.

Make cashew paste by grinding 12-15 cashew with some water. Mix this paste in cream.chicken is tender than add cream and mix well for couple of minutes at low to medium flame.

Add whole garam masala and green chillies in a muslin cloth and make potli.I used infuser for garam masala.boil water with salt,infuser, green chillies,lemon juice.add soaked rice in boiling water and boil till 3/4 % done or (ek kanni ke ubaal lein).
Remove the infuser from rice. - 5
Add chopped fresh mint and coriander and kewra water in chicken masala.now spread a layer of rice at bortom of pot than add white chicken masala, add fried onion.again rice,fried onions at top.cover and keep at dum for 5-8 min high heat. than lower the heat.

Mix the rice gently before serving. Serve hot with raita, salad, hari chutney, lal chutney and enjoy with cookpad 😋😋

Note : For Rice I have used sela you can make in basmati as well. Also I have not used tetra pack cream this time yet I used fresh cream directly from top of whole boiled milk and it serves perfectly. Do taste your masala & adjust chillies if you like.
