Ingredients

  • 3.5 lbsgold potatoes
  • 1large yellow onion
  • 4 tbspsalted butter
  • 1/4 call-purpose flour
  • 1 1/2 cmilk (half heavy cream)
  • 1/2 tspsalt
  • 1/2 tspgarlic powder
  • 1 tbspVegeta seasoning
  • 8 ozsharp cheddar cheese, shredded
  • 1/2 cGruyère cheese
  • 1/4 cParmesan cheese
  • Parsley

Steps

  1. 1

    Preheat oven to 375

  2. 2

    Slice potatoes and onion to 1/8 in thick and arrange in greased 8x12 pan in 3 rows

  3. 3

    Melt butter over medium heat in skillet, whisk in flour, milk, and seasoning, stirring constantly to make a roux

  4. 4

    Gradually add cheddar cheese and heat until gravy consistency

  5. 5

    Pour cheese sauce over potatoes/onions in baking pan

  6. 6

    Cook at 375 for 45 mins

  7. 7

    Pull from oven and sprinkle with Gruyère and Parmesan cheese

  8. 8

    Return to oven and cook 45 mins at 375

  9. 9

    Garnish with parsley
