Assemble ingredients

Prick boiled Eggs and Marinade eggs with slight salt + turmeric + red chilli powder and marinade for around 10 minutes.

Make paste of chopped tomatoes + ginger and Make paste of Coriander + green chilli +1 tbsp curd and keep aside.

In pan add 2-3 tbsp oil, add all whole spices and let them crackle for few seconds, then add garlic sauté for few seconds then add onion and sauté under medium flame till rawness goes off.

Add tomato paste and sauté for around 2 minutes, then add 2 tbsp curd and sauté for 3-4 minutes till moisture from tomato and curd evaporates.

Now add all spices except garam masala and sauté for around 3 minutes till spices leaves oil.

Now add coriander paste along with little water + salt and sauté for 4-5 minutes till water evaporates. Add 1/2 cup water and wait for a boil.
Add eggs + Garam Masala powder + 1 tsp red chilli powder and cook for 4-5 minutes under medium flame. - 8
Simmer and cook further for 2-3 minutes, dish is done.

Serve with paratha/ Phulka/ naan and enjoy the Coriander flavoured Egg curry.
