Ingredients

Serves 4 servings
  • 1.1 lbs (500 grams)wide rice noodles
  • 4large fresh shrimp
  • 2cleaned and sliced squid
  • 2 tablespoonsminced garlic
  • 1/2 cup (120 ml)vegetable oil
  • 4large eggs
  • 7 oz (200 grams)lettuce leaves
  • 4long hot peppers, sliced lengthwise
  • 4 teaspoonssoy sauce
  • 4 teaspoonsseasoning sauce
  • 4 teaspoonsfish sauce
  • 4 teaspoonssugar
  • 10Thai bird’s eye chilies, chopped
  • 3 cups(about 45 grams) fresh Thai basil leaves
  • 3 teaspoonsground black pepper

Steps

40 minutes
  1. 1

    Sauté the garlic in oil until fragrant. Add the shrimp and squid, and stir-fry until just cooked.

  2. 2

    Add the eggs, rice noodles, and sliced hot peppers. Season with soy sauce, seasoning sauce, fish sauce, and sugar. Stir-fry quickly, then add the Thai basil leaves just before removing from heat.

  3. 3

    Serve on a plate lined with lettuce leaves.
