My Favorite Winter Recipe.
Protein, Vitamin Rich, Super Healthy and Nutritious Dry Fruit Laddu for Winter. It is made using 7 dry fruits, jaggery and 4 spices. These laddus will help you get energy, warmth and boost your immunity. Ginger powder and coarsely ground cardamom is good during winter and it enhances the taste of the laddu. If white pepper is not available you can use black pepper. This helps to balance the sweetness of the laddu. Nutmeg is very heaty. It helps to give you warmth. A necessity in winter. Just one Laddu per day will protect you from the cold winter.

Firstly, add the sesame seeds to a pan and dry roast it, stirring continuously, till it puffs up, the color changes slightly and you get a good aroma of it. Remove from pan and transfer it to a plate to cool.

Next add the watermelon seeds to the same pan and dry roast it, stirring continuously, till it puffs up, the color changes slightly and you get a good aroma of it. The watermelon seeds will start crackling. Remove from pan and transfer it to a plate to cool.

Then add the poppy seeds and dry roast them till the color changes slightly and you get a good aroma of it. Remove from pan and transfer it to a plate to cool.

Then add the dry coconut slices and dry roast it till the color changes slightly and you get a good aroma of it. Remove from pan and transfer it to a plate to cool.

Then add the fox nuts (makhana) which is a low-calorie dry fruit packed with protein and fiber. Dry roast it till the color changes slightly and the nuts are crispy. It should break when crushed. Remove from pan and transfer it to a plate to cool.

Then add the almonds and dry roast it, stirring continuously, till it puffs up and you get a good aroma from it. Remove from pan and transfer it to a plate to cool.

Then lastly, add the peanuts and dry roast them till perfectly done. Remove from pan and transfer it to a plate to cool. Peel off the skin. All the dry fruits are now roasted and ready to be ground coarsely.

To begin with the grinding process, firstly, add the roasted sesame seeds and watermelon seeds to a mixer grinder and grind it coarsely. Remove it to a large mixing bowl.

Next, add the roasted dry coconut slices and poppy seeds to a mixer grinder and grind it coarsely. Add it to the same mixing bowl.

Then add the roasted fox nuts (makhana) to a mixer grinder. These need to be ground separately. Grind it coarsely and add it to the same mixing bowl.

Lastly, add the roasted almonds and peanuts to a mixer grinder. Grind it coarsely and add it to the same mixing bowl. All the roasted dry fruits are ground coarsely and are ready. The main step is done.

Mix all the roasted and coarsely ground dry fruits well and set them aside. Keep the spices ready. Added a few drops of cardamom essence for that extra flavor.

Add the chopped jaggery and 3 tablespoons of water to a pan.

Put the flame on and cook on medium flame, stirring continuously, till the jaggery melts/dissolves completely and foam is formed. The jaggery syrup is ready.

Reduce the flame to low and add the spices ie. ginger (sonth) powder, white pepper powder, grated nutmeg, and coarsely ground cardamom to the jaggery syrup and mix it well. Also added a few drops of cardamom essence for that extra flavor. It is purely optional.

At this stage, add the roasted and coarsely ground dry fruit powder and mix it well, and off the flame. The laddu mixture is now ready. Immediately remove from pan and transfer it to a glass plate/bowl to cool.

When the laddu mixture is slightly warm, apply ghee to your hands and bind it into laddus according to the desired size. Prepare all the laddus similarly. Store these dry fruit laddus in an air-tight container. It stays good for 2 months.
