Aloo tikki tamatar chat

In a mixing bowl Take mashed potatoes add salt and cornflour,mix well and make medium size tikki from the mixture

Take a pan add 2tbsp Desi ghee and heat it,then place the tikki in the pan and shallow fry them from both side until they turn golden and crisp. Transfer in a plate and Keep aside

Take a pan add 2tsp ghee,add cumin seeds,chopped ginger and green chillies. Saute few seconds then add chopped onion saute till they turn light golden. Add roughly chopped tomatoes.

Add 1tsp salt,mix and cooked on medium flame for 4-5 minutes till the tomatoes turn mushy. Mash the tomatoes with ladle or masher. Add boil pigeon peas, mix well. Add all the powder spices. Add 1tbsp green chutney,1tbsp tamarind chutney and 1tbsp meethi chutney.

Mix and cooked on high flame stir continuously. When it started to leave the pan add coriander leaves.mix and turn off the flame.

Now it's time to assemble the plate. First spread some curd and green and tamarind chutney. Place some tikki in the plate add prepared tomato chat.sprinkle some Chilli flakes, cumin powder.add little green and tamarind chutney over it and add chopped coriander leaves

Now place some tikki over it.repeat the same process of adding spices.spread some curd,all chutneys and broken water balls(glogappe) garnish with some chopped coriander leaves serve hot
