Ingredients

  • 2 tablespoonsolive oil
  • 4boneless, skinless chicken breasts
  • 1onion, diced
  • 2 clovesgarlic, minced
  • 1red bell pepper, diced
  • 1green bell pepper, diced
  • 1 (14.5 ounces)can of diced tomatoes
  • 1 (8 ounce)can of tomato sauce
  • 1 tablespoonItalian seasoning
  • 1 teaspoonsugar
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 1/4 cupdry red wine

Steps

  1. 1

    Heat the olive oil in a large skillet over medium-high heat.

  2. 2

    Add the chicken and cook until golden brown, about 5 minutes per side.

  3. 3

    Remove the chicken and set aside.

  4. 4

    Add the onion, garlic, and bell peppers to the skillet and cook until softened, about 5 minutes.

  5. 5

    Stir in the diced tomatoes, tomato sauce, Italian seasoning, sugar, salt, and black pepper.

  6. 6

    Add the chicken back to the skillet and pour in the red wine.

  7. 7

    Bring the mixture to a simmer and cook, stirring occasionally, until the chicken is cooked through, about 10 minutes.

  8. 8

    Serve over cooked pasta or rice. Enjoy!
