I love to bake cakes but frosting, glazing is something I avoid as I am not good at it! This was my first attempt at getting "creative" in June 2021. It was a cake that I baked for my mom's birthday and I ate it all! My mom is in Pakistan and she only got to see the pic. This cake always make me smile as it was featured last year in a baking calendar.

Ingredients

  1. 1/2 CupUnsalted Butter, room temperature
  2. 1/2 CupAlmond flour
  3. 1 CupAll-purpose flour
  4. 1 Tsp.Baking powder
  5. 3/4 CupSugar
  6. 2Eggs
  7. 1/4 CupYogurt, room temperature
  8. 1 Tsp.Cardamom powder
  9. 1/2 Tsp.Vanilla essence
  10. 1 Tbsp.Rose water
  11. 1 CupPowdered Sugar
  12. 1 Tbsp.Milk
  13. 1 Tsp.Rose water
  14. As required, Pistachio, chopped
  15. As required, Rose petals, roses

Steps

  1. 1

    Preheat oven 325F.
    Cream butter, eggs, sugar, yogurt with a whisk of stand mixer on medium speed for 2 minutes.

    Add cardamom, vanilla, rose water and whisk for 1 minute on low speed.

  3. 3

    Add flour, almond flour, baking powder and whisk for 1 minute. Start at low speed to medium speed. Whisk until all ingredients are well combined.

  4. 4

    Pour the batter in a buttered and parchment line pan

  5. 5

    Bake for 1 hour or till a tester comes out clean.
    Remove and allow to cool.

  6. 6

    While the cake is cooling, lets make the glaze.
    Mix together powdered sugar, rose water and milk till smooth.

  7. 7

    Thinly slice the surface of the cake for a flat surface.

  8. 8

    Pour the glaze over the cake.

  9. 9

    Decorate with pistachio, rose petals and roses.

  10. 10

    Sprinkle powdered sugar over the roses and petals.

  11. 11

    Slice and enjoy!
