Chicken gyros

Making a homemade gyro is not all that daunting. Greek Chicken Gyro is actually a pita bread sandwich, filled with lots of spicy chicken, fresh juicy tomatoes, cucumber, crunchy slices of onion and cooling tzatziki sauce. It is simply irresistible!
And no, you don’t need a huge spiral spit that you see in Greek or Mediterranean shawarma restaurants. You can cook the chicken in a skillet or bake in the oven. If using a skillet, add a little olive oil to the hot skillet and then cook until nicely browned and juices run clear. Don’t skip making the homemade tzatziki sauce. Its quite easy to make and it is better than store-bought. The salad to serve the gyros with is awesome. You would just want to eat it as is! The infused oil is optional, but it's really easy to make and makes a big difference in the final taste of the gyros.

Trim excess fat off the chicken and set aside.

In a bowl combine the yogurt, lemon juice, vinegar, garlic paste, olive oil, paprika, oregano and coriander powder.

Season both sides of the chicken with salt and pepper and add to the marinade.
Mix well, cover and refrigerate for 1 hour. - 4
In another bowl, toss/combine all the salad ingredients. Cover and chill till ready to use.

Heat a grill pan with some olive oil and grill the chicken, in batches, till cooked through and the juices run clear. Slice and set aside.

Make the infused oil by simmering all the ingredients listed under “Infused Oil” for 3-5 minutes. Set aside.

To assemble the gyros, brush the pita bread/naan with the infused oil and grill till heated through.

Place the pita/naan on board and spread tzatziki sauce, layer with chicken slices brushed with infused oil, add the cucumber salad and some more tzatziki sauce.

Fold up like the sides like a soft taco, wrap the ends with a square of aluminum foil, and serve immediately.
