This is my favourite and simplest cake recipe. Results are always perfect 😋
Steps

In a bowl, combine and sift all the following dry ingredients: all purpose flour, white sugar, cocoa powder, salt, baking powder & baking soda.

Add eggs, fresh milk & vegetable oil and mix well with a hand mixer or whisk

In a separate bowl, add boiling water & coffee then add to the mixture and mix well

Add lemon/vinegar and mix well.

Prepare your baking tin by applying margarine/butter then dust with some flour or line with baking paper. Then pour your mixture into the tin.

The baking process: The salt I use is recycled because I use it when baking. Take a good amount of salt and line in a sufuria that is bigger than your baking tin. Take a smaller lid and cover the salt.

Take a bigger lid and cover the big sufuria then put on the heat, medium low so as to preheat for about 10 mins.

Uncover & place your baking tin in the sufuria for 30 mins

Your cake is ready. Allow it to cool for a few minutes then remove from the tin and allow it to cool some more

For the frosting. Ensure its done when the cake is completely cooled.

In a pan on low heat, put your milk to boil. Mix all the dry ingredients: white sugar, cocoa powder & all purpose flour in a bowl then add to the milk and stir. Keep stirring until the mixture is thick & smooth. Then add your butter/margarine. Set aside to cool

Take your cake and slice into 2 halves. Layer the frosting on the bottom half then cut your chocolate into pieces and layer them on top of the frosting

Place the top layer and layer it with the rest of the frosting. Grate/shred the remaining chocolate. Cover then place it in the fridge to harden.

Your cake is ready for serving. I enjoy it most with sugarless lemon tea as the cake is already sweet. Enjoy 😋
