First, finely chop the carrots, onions, bell peppers, ginger, garlic, green chilies, and cabbage using a chopper.

Finely chop all the ingredients as shown in the picture.

Combine all the chopped vegetables, add 1 tablespoon salt, cover, and let sit for 5 minutes. Then transfer to a cotton cloth and squeeze out the excess water.

Press out any remaining water by hand, then transfer the vegetables to a bowl. Add a little salt, crushed black pepper, and butter, and mix well. The butter helps keep the filling moist. Now, place the all-purpose flour in a bowl.

Add water to the flour and knead well until you have a soft dough. Wrap the dough in parchment paper or plastic wrap and refrigerate for 5 minutes. Knead again, then divide into small balls and roll out with a rolling pin, keeping the center slightly thicker.

Place the filling in the center and stuff the momos.

Shape all the momos as shown. Add water to an idli pot as needed and bring to a boil.

Grease the idli steamer trays with refined oil, place the momos on them, cover, and steam on medium heat for 20 minutes.
