Ingredients

40 mins
  1. 1/2 cupMaida/refined flour
  2. 1/2 cupunsweetened cocoa powder
  3. 2 large eggs at room temperature
  4. 1/2 cupsugar
  5. 1/2 cupbrown sugar
  6. 1/2 cupsalted butter melted to room temperature
  7. 1 tbspvegetable oil
  8. 2 tspvanilla essence
  9. 1/2 tspsalt
  10. 2 tbspwarm milk
  11. 1/2 tspinstant coffee powder
  12. 100 gmsdark chocolate
  13. As RequiredChoice of dry fruits- My favourites are sliced almond and walnuts (optional)

    Preheat the oven to 180c. Line a 7x7-inch baking tray with parchment paper.

  2. 2

    Add the coffee powder to the milk and mix well. Keep aside.

  3. 3

    In a large bowl combine melted butter, oil, and both sugars and mix for 2 mins.

  4. 4

    Add eggs, salt, and vanilla essence and whisk for a few minutes until the mixture is evenly combined and light in colour.

  5. 5

    Sift in Maida and cocoa powder. Fold in dry ingredients into the wet mixture until just combined, avoiding over-mixing. Add the coffee mixture and give a good mix.

  6. 6

    Fold in half of the dark chocolate chunks into the batter.

  7. 7

    Pour the batter into the prepared pan, and tap twice to make the top smooth.
    If making only chocolate - top with the remaining half of the chocolate chunks
    If adding dry fruits - top with almond slices and walnut chunks

  8. 8

    Bake for 20 minutes until the Center of the brownie no longer jiggles. If required bake another 2/3 minutes.

    Remove from the oven and allow to cool to room temperature before removing from the mould. I generally leave it overnight before consuming it.

    Now enjoy the treat.
