Ingredients

20 minutes
2 people
  • Bravas sauce
  • 2 tbspolive oil
  • 1 tbspplan flour
  • 1 tspsmoky paprika
  • 1 tsphot paprika (or a pinch of cayenne instead)
  • 150 mlvegetable stock
  • Patatas
  • 125 g(snack) to 250 g (hungry) potatoes per person
  • 1 tbspolive oil
  • 1 tspsalt

Steps

    Peel a dice the potatoes. (I like them about 1.5 to 2cm square)

  2. 2

    Rinse the potatoes in cold water (to remove some of the starch from the outside) and then pat them dry on a towel or kitchen roll.

    Cover them well with the olive oil and sprinkle with salt

  4. 4

    Add to the air fryer and set for 18-20 minutes at 200C / 390F. Be sure to shake / move the potatoes around once or twice during the cooking for even crispness and browning.

    While the potatoes are cooking, add 1t bsp olive oil to a small pan and heat gently.

  6. 6

    Add the plain flour and the spices and stir into the oil to form a smooth paste.

  7. 7

    Now add your stock (can be warm or cold) gradually, stirring all the time to prevent lumps. You may find the paste seems to get thicker before it starts to thin out into a sauce. Don't worry, this is fine. Just keep stirring and go gradually with the stock!

    Heat for a few minutes until the sauce is steaming hot, but not quite boiling. (Oh, and don't forget to shake your potatoes!)

    Check the potatoes are nice and brown and that the middles are soft and fluffy (check with a fork). Once cooked, serve the potatoes drizzled with the sauce and maybe offer extra sauce on the side - it's delicious so people might want extra!
