Sweet corn soup is prepared with tender kernels, veggies and spices. This is an Indo-Chinese recipe known as comfortable delicious and healthy. This soup is easy to make , tasty, and gives a fulfilling experience. As we are feeling a change in the weather, this nutritious soup, certainly will bring to feel better. I have used boiled potatoes and sweet corn paste, to thicken the soup.

1 Tspbutter
1 Tspvirgin olive oil
3/4 Tbspchopped ginger
3/4 Tbspminced garlic
2 Tbspchopped onions
1/4 cupboiled sweet corn
1/4 cupboiled peas
1/4 cupchopped carrot
1small boiled potato, chopped
1/2boiled sweet corn paste
1green chilli, de- seeded and chopped finely
2 Tbspchopped green onions
1/2 Tspblack pepper powder
3 cupswater

Arrange the ingredients.

Heat butter and extra virgin olive oil. Add chopped onion, ginger, garlic and green onions. Fry on low heat till atomic.

Add the vegetables, mentioned and saute on low flame for 2-3 minutes to make sure that they are softer.

Add 3 cups of water and bring to boil. Then mix the sweet corn paste to thicken the soup.

It takes 3-4 minutes for the soup to thicken.
Add salt and black pepper powder. Mix well and serve the hot delicious Sweet Corn Soup as such/ with bread.
