This is one of our favorite dishes that I cook often, and the whole family enjoys it! It's easy, quick, and delicious!

Add olive oil to a wide pot to coat the bottom and heat it slightly.

Blend the onion and carrot in a food processor, then add to the pot and sauté. Once they start to soften, add the leeks (finely chopped and well washed) and sauté until they are tender. Next, add the spinach and stir until it wilts.

When the spinach has wilted, add the rice and sauté for 2-3 minutes. Puree the tomato in the food processor and add it to the pot (if you like, you can add 1 teaspoon tomato paste).

Add 1-2 cups hot water and let everything simmer until all the ingredients are cooked. Near the end, finely chop and add the dill.

Serve with lemon juice! Enjoy!
