Heat 2 tbsp oil in a saucepan over medium heat to make pitlai stock powder- 2 minutes.. First fry coriander seeds.- 2 minutes. Then add the dhals, and black pepper, one by one and roast. Finally add chilli and turn off the stove. Keep the roasted items in a bowl.
Heat 2 tbsp oil in the same saucepan over medium heat - 2 minutes. Add coconut and roast, let it slightly brown. Make a coarse powder of all the roasted ingredients in a mixer. - 4
Cook toor dal with 3c water in a pressure cooker.
Heat 2 tbsp oil in a saucepan over medium heat - 2 minutes. Fry the bitter gourd pieces until brown.
Heat 2 tbsp oil in a saucepan over medium heat - 2 minutes. Add mustard; Let it splutter. Then add fennel, fenugreek seeds, and asafetida, roast for 1 minute. Add turmeric powder, curry leaves. - 5
Dissolve tamarind paste in 1 cup of water and stir along with the seasoning. Add jaggery, salt and stir, continue cooking for 5 minutes. Let it boil and thicken.
Add the cooked lentils and stir. Stir in the roasted bitter gourd pieces, cook for 2 minutes. Add 2tbsp prepared masala powder. Add 2 tbsp oil, stir and turn off the stove. Taste to make sure that the pitlai tastes good, and meets your expectation.
Transfer to the serving bowl... Serve with rice, dosa, or even chapati
