Firstly, to prepare the curd-masala mixture, in a bowl add yogurt, turmeric powder, roasted coriander powder, spicy red chilli powder, kashmiri red chilli powder, ginger garlic paste and garam masala powder. Mix it well and set it aside.

In a bowl add the chicken pieces, turmeric powder and salt. Mix it well and set it aside. This step is optional. You can skip it and add the chicken pieces directly. Clean and wash the fenugreek leaves well. Chop the fenugreek leaves and set it aside.

Assemble all the ingredients required to make delicious Methi chicken.

To begin with, heat oil and ghee in a kadhai. Add cumin seeds, whole peppercorns and bay leaves and allow it to sizzle for few seconds.

Next add the chopped onions and salt and saute till slightly golden brown.

Then add the curd-masala mixture and mix it well. Cook on high flame till the oil appears at the surface.

Now add the marinated chicken pieces and saute it for few minutes.

Add the chopped fenugreek leaves. Mix it well and cook on high flame for 2-3 minutes till oil appears at the surface. If fresh methi is not available, add 1/4 cup dried fenugreek leaves, at the cooking stage.

Add 3/4 cup water and let it come to a boil. Add water according to desired consistency.

Cover and cook on low flame for 20-25 minutes or until the chicken is cooked perfectly. Switch off the flame and keep covered for 10 minutes.

Healthy and Nutritious Methi Chicken is ready. Serve it warm with naan, roti, chapati, phulka, hot steamed rice etc.
