Taiyaki-style Snacks (with a sandwich press)

I wanted to eat freshly made taiyaki rather than frozen, so I thought of using my hot sandwich maker. There's no need to worry about adjusting the heat or anything, and they were easy to make.

For 8 portions, you will need about 300 g of anko. You can freeze leftovers. Of course, using canned adzuki beans is a lot easier. The cooking time probably differs depending on the hot sandwich maker, so keep an eye on it. However if you open the lid too early, the batter may stick to it, so watch out for that. For 8 portions. Ingredients

8 servings
  1. For the homemade anko (sweet azuki bean paste):
  2. 200 gramsAzuki beans
  3. 100 gramsSugar
  4. 80 gramsLight brown sugar
  5. 1 pinchSalt
  6. For the taiyaki batter:
  7. 150 gramsCake flour
  8. 2 tbspSugar
  9. 1/2 tspBaking powder
  10. 1Egg
  11. 1 tspVegetable oil
  12. 200 mlWater

Steps

    Cook the adzuki beans. Rinse the beans carefully. Put in a pot with 4 times their volume in water and bring to a boil. When it comes to a boil, drain the beans into a colander or sieve, return to the pot with fresh water, and bring to a boil again.

    When it comes to a boil, turn the heat down to low and simmer until the beans are soft enough to mash with your hands. If the water boils down too much, add more.

    Combine the sugar and light brown sugar, and add to the beans in 3 batches. Add the salt and continue simmering. If you want to enjoy zenzai (sweetened adzuki bean soup) too, take a portion out at this point.

    When the beans have thickened, stir with a wooden spatula as you simmer to make firm anko.

    Make the taiyaki batter. Combine the cake flour, sugar and baking powder in a bowl. Add water little by little to form a paste. Add an egg and beat well. Mix in vegetable oil.

    Pour the batter into a preheated hot sandwich maker. Be careful not to overfill.

    Spread out the anko as flat as possible over the batter.

    Pour more batter over the anko, and close the lid of the sandwich maker. Cook for 10 minutes, and they're done.

Great recipe. Did it on the cupcake maker. Added 2 tbs ok kinako to the batter for extra flavor.
