Homemade Potsticker Wrappers (Half-Scalded Dough) Recipe

Previously, I mentioned that half-scalded dough is great for making pan-fried dumpling wrappers, so this time I’m using the same dough to make potsticker wrappers.

Previously, I mentioned that half-scalded dough is great for making pan-fried dumpling wrappers, so this time I’m using the same dough to make potsticker wrappers.

Place the all-purpose flour and salt in a bowl. Add the hot water and stir until the mixture looks crumbly, then add the room temperature water.

Mix with a stand mixer until a dough forms.

Transfer the dough to a mat and knead briefly. Cover with plastic wrap and let it rest for 10 minutes.
After 10 minutes, knead the dough again until smooth. Cover with plastic wrap and let it rest for 1 hour.
After 1 hour, divide the dough into small pieces, about 18 grams each. - 4
Roll each piece into a round potsticker wrapper. Make the edges slightly thinner than the center.

Finally, dust both sides of each wrapper with flour and stack them together. This recipe makes about 49 wrappers (about 18 grams each).
Your potsticker wrappers are ready to use for making potstickers.
