Mixed Vegetables Khichdi using all the amazing seasonal Vegetables is an amazing one pot meal known for it's incredible taste. Though it's quite simple on it's own, a huge array of different side dishes and accompaniments is what makes this way too incredible. Needless to say, it tastes equally great on it's own as well.
It's an absolutely tempting platter that can be enjoyed on any day. The guests would also love it. This is made for a yummy Breakfast on a weekend in my maternal home. However it can be made for Lunch as well and at times when you want to eat something healthy and a perfect comfy meal.
It's a delicious and a complete meal in itself. Gets done pretty much easily too. And suffices a large gathering too. Serve it with some hot and crisp Poppadoms or Papads as well for a lovely meal. Or with some freshly tempered Dahi or Curd. The choices are endless. Pickle, Ghee and Lamb Mince also tastes great alongside this.

First of all, soak the lentils after washing thoroughly for at least 2-3 hours or overnight for best results. Just an hour before cooking, soak rice separately or add it to the same bowl with the lentils. Now in a non-stick pot, heat ghee or oil or a combination of both and add the ginger garlic green chilli paste and the sliced onion to it. Saute it for a few minutes until the raw smell fades away on a low heat. Now add the chopped dill greens, tomatoes, capsicum and fenugreek greens too.

Followed by fresh green peas and the whole garam masalas one by one including red chilli and the turmeric powders along with green chillies and coriander leaves. Cover and cook for about 5 minutes. After about 5 minutes of sauteeing, add the soaked rice and the lentils.

Saute for a minute and then add about 4 cups of water along with Salt. For the first 10 minutes, let it cook on a high flame stirring in between, to mix everything well. After 10 minutes, lower the flame and cover. In between just keep mixing it gently once or twice. That's it. It gets done pretty quickly. Yum!

Serve it hot at breakfast on a weekend for a family special meal. Enjoy!
