Strawberry Jelly

I love strawberries so I use lots of them.
I always make this when I can get my hands on cheap and tasty strawberries.
I finally came up with this recipe after many trial and errors, thinking about the following points: To prevent discoloration, the gelatin liquid should be pinkish, prevent scum floating on top and keep a nice strawberry texture. The picture has two layers, and the bottom part is milk pudding. I used gelatin that requires 250 ml liquid per 5 g gelatin powder. Wash the strawberries and remove the green tops and halve. Wet the gelatin with 1 1/2 tablespoons of water (not included in the ingredient list) to soften. Squeeze the lemon.

Add the halved strawberries in a small pot and coat with sugar. Let stand for 30 minutes.

After 30 minutes, when the enough liquid comes out from the strawberries, add lemon juice.

Heat strawberries over medium heat, stirring with a wooden spatula.

Stir well when the strawberries start to bubble. When they start to bubble for a second time, add hot water. Be careful not to overcook!

Turn off the heat and add the softened gelatin. Stir to combine.

Transfer the strawberry gelatin mixture to a bowl to prevent discoloring from overcooking. Chill the gelatin mixture, stirring occasionally, over ice packs or in ice bath.

When the gelatin starts to coagulate, divide the gelatin into serving glasses and chill in the refrigerator.

It looks nice when the strawberries are floating on top, but it's up to you.
