Baingan ki Sabzi with Matar

Take a wok, add oil, heat it. In goes methi dana, let it splutter.

Now add garlic, saute it until light brown. In goes green chilli, stir fry it for 30 sec.

In goes onion, stir fry it until light brown. Add haldi powder, mix it well.

Add baingan pcs now, stir fry it for a minute. In goes salt mix it well. Lower the flame, cook it covered until baingan is almost cooked.

Now add matar, red chilli powder & dhania powder, mix it well. Stir fry it for 2 minutes.

In goes tomato, mix it well. Cook it covered on low flame for 5 minutes.

Open the lid, increase the flame, add dhania patta, mix it well. Stir fry it until a lil dry.

Turn off the flame, cover it with the lid for a minute. Take out in a serving bowl, garnish it with dhania leaf.
