Start with cooking the pasta in boiling salty water as per instructions. Drain and save some of its water

Chop the vegetables

Start sautéing the veggies on medium to low heat without the spinach in oil until nicely soft
- 4
Add two tablespoons of sour cream with 2 ladles of pasta water
- 5
Add the spinach + basil and cook for like 1-2 minutes until wilted. Add salt and black pepper
- 6
Add the pasta and increase the heat for a few minutes to reduce the liquid
- 7
Serve!
