Soy sauce, sugar, onion and garlic in a roasting bag for both marinade and roast! Cookpad Auntie Eiko posted this, it is brilliant to marinade and roast in the same bag. Most tender pork steak ever!
I tried it a few times and tweaked her recipe by adding a lemon and a mild red onion for the marinade to make a sweet and sour gravy to my liking. Thank you Eiko.
The roasting bag is expensive and does not survive the oven for reuse, so I tried a ceramic roasting dish with heavy glass lid for both marinade and roast. Success!

Slice fresh pork shoulder into large 3/4 pound steaks, put in oven roasting bag. Add quartered red onion, 2 minced elephant garlic cloves, 2 Tbs thick sweet soy sauce, slices of one lemon. Marinade overnight.

Roast pork steaks in closed oven bag for one hour at 350F degrees. Closed bag will swell up from cooking the marinade and help tenderize the meat. Turn heat down, roast two more hours at 250F degrees. Take out pork and onion, put on warmed platter. Pour marinade and meat juices from bag into glass measuring cup, I got 3/4 cup.

To make a sweet and tangy gravy, add 1 Tsp corn starch mixed with 4 Tbs cold water to the meat juices, bring to boil, serve over roasted pork steaks and onions. Meat is so tender, no knife needed! Enjoy.
