Wash and peel the carrots thoroughly, then grate them.

In a large skillet, add the grated carrots and cook over medium heat, stirring occasionally, until most of the moisture evaporates. Add the milk and let the carrots cook in the milk. When the milk starts to dry up, add the sugar and continue to cook. Once the sugar dissolves, add the ghee and sauté well.

When the grated carrots are cooked and the mixture is dry, stir in the ground cardamom. Mix in some of the chopped nuts, reserving a few for garnish. When serving, top the halwa with almonds, cashews, or walnuts. Gajar ka Halwa is a classic Indian dessert that's easy to make at home. You can also add khoya (milk solids) after the halwa is cooked, if desired.
