Moist Potato Chocolate Sandwiches

"Round Potato Cake Jam Sandwiches" are very popular in my home, so I decided to make a chocolate version. When they finished baking, they puffed up a bit. Maybe it was because I put in a lot of cocoa powder, but that puffed up part was very moist! But that's that and I figured this is good enough to upload here.

In Step 1, microwave at 600W for about 2 minutes and 50 seconds to 3 minutes. In Steps 2 & 3, it doesn't matter if the potatoes are warm or not. In Step 3, If though dough is too sticky and hard to handle while shaping, add just a tiny bit of water (or oil) to your hands. For 4 sandwiches. Recipe by caramel-cookie

Ingredients

4 servings
  1. 1 largePotatoes
  2. 35 gramsCake flour
  3. 20 gramsCocoa powder
  4. 1/2 tspBaking powder
  5. 30 gramsGranulated sugar
  6. 2 tsp+ 50 ml Milk
  7. 30 gramsMilk chocolate

Steps

  1. 1

    Add the chocolate to the 2 teaspoons of milk and heat in the microwave for 30 seconds. Knead together well. Boil the potatoes or microwave them, and then mash. Preheat the oven to 170°C.

    Add the granulated sugar to the potatoes, then add the remaining milk. Mix well with both additions.

    Combine the flour, cocoa powder, and baking powder and sift into the potato mixture. Lightly mix everything together. Shape into 4 cm slightly flat balls, place on a parchment paper lined baking tray.

    Bake for 15 minutes at 170°C.

    When they have finished baking, cool on a cooling rack.

    Once cooled, make pairs and spread a teaspoon of chocolate cream onto one potato cake in each pair to make a sandwich.
