It has a yellow color because the kataifi is made with turmeric. I had it in the freezer, so that's what I used.

Cooking Instructions

Spread the kataifi pastry on a tray to dry slightly. Butter the baking pan and layer half of the kataifi. Press it evenly with your hands. Add the almonds, pistachios, and walnuts, spreading them evenly.

Add the remaining kataifi and press it lightly with your hands. Gradually pour the melted butter over it. Let it sit for about 15 minutes to absorb the butter.

In a saucepan, combine the water, sugar, cinnamon sticks, cloves, and lemon peel. Bring to a boil over medium heat for 10 minutes. Finally, add the lemon juice, turn off the heat, and set aside to cool. Bake the kataifi in the oven at 320°F (160°C) for about 50 minutes to 1 hour with fan. Pour the syrup over it.

Allow the syrup to be absorbed. Cut into desired pieces.

My Greek Yiayia (meaning Grandmother in Greek) raised me after my mom died when I was 6 years old. She is from the Peloponnese part of Greece and she always made Baklava and other Greek foods as well. We lived in ALABAMA so she used the pecans from her pecan tree. This was a task because she gathered, cracked and cleaned all of the pecans herself and then milled them with an old fashioned hand turned grinder that she clamped to the side of the kitchen table.
