Walnut Croquants with Frozen Puff Pastry

I used to always buy croquants whenever I walked by my favorite bakery. So I tried making easy croquants.
Bake until the bottoms turn a caramel colour while checking on them occasionally. When they have mostly cooled down, remove from the molds gently, and let cool some more. Recipe by Yukirinrin

Cooking Instructions

Roast the walnuts in the oven preheated to 150℃ for 5 minutes, break into pieces with your hands, then let cool.

Partially defrost the frozen puff pastry, and cut into 1-2 cm squares.

Mix the granulated sugar, brown sugar, Step 1, and 2.
- 4
Line the baking sheet with parchment paper, and place circular molds. Pack in the mixture Step 3 and bake in the oven preheated to 200℃ for about 30 minutes.

It turns out to be a lot of fun to do and you get a much better pastry than the store bought one.You definitely need a french rolling pin for working the butter.
