My favourite! I remember how I would want to break my 1 week 'aluna' fasting with these vada! They are delicious, filling and satisfying. There is not much hastle to make them, but you definitely need some expertise in frying them.
When perfectly fried, the outer layer of vadas is golden and a bit crunchy, whereas the inner part is melting-in-mouth soft.

Ingredients

16-20 vadas
  • 1 1/2 cupsyellow (sweet) corn flour
  • 1 1/2 tbspoil
  • 1 tbspSesame seeds
  • 1 tspCarrom seeds
  • 1 tspmethi (achar) masala
  • 3/4 tspturmeric powder
  • 1/2 tspred chilli powder
  • 3 tspsugar
  • 1 tspsalt
  • 2 tbspgarlic and green chillies paste
  • 1/2 cupchopped coriendar leaves
  • 1/2-3/4 cupscurd
  • Oil to fry

    Combine flour and oil well. Add rest of the ingredients and combine very well.

    Knead dough. Add Water if needed. The dough should be soft enough to make vada without cracks. Cover and keep aside for 1-2 hours. At the time of making, you may use more water if needed.

    Shaping vadas: Take a plastic/butter paper and place it on a flat surface. Sprinkle some water over it. Pinch out a portion of about 4-5 vadas from the dough. Add a bit of water to smoothen it.

    Place some portions of the dough (enough for 1 batch) on the plastic and gently pat it all around to make medium thick vadas. Wet hands will make it easier. If the vada sticks to your hand while patting, if the edges of vada cracks or if it is hard to pat and spread; understand that either the dough or your hands are dry.

    Frying vadas: fry on medium flame throughout. When the oil is moderately hot, WET your fingers and gently place a vada on your fingers by lifting the plastic a bit. slide it down in the oil VERY GENTLY using your fi gers and the thumb. Do not slide it on the side of the pan. Otherwise, it will not fully dip in the oil. There are high chances of splashes of oil, so stay ALERT and GENTLE at all times.

    Flip them very gently when the bubbles get lesser. Often, flip and fry them till they are evenly crisp and golden on both sides. Take them out on a kitchen towel and serve hot with tea.
