Need a Meatloaf, subtler than a 'sausage'. I sometimes prep it the night before for everything to meld, conglomerate in perfect seasoning and flavor. Make and mix the loaf, and refrigerate ovetnight.

Ingredients

1 1/2 hours
8 servings
  1. 1/4sleeve each, of saltines and club crackers, crushed
  2. 3 tbs.Milk
  3. 2eggs
  4. 1medium onion, chopped
  5. 2large Jalapenos, deseeded, coarse chop
  6. 2.81 lbs80/20 Ground Chuck
  7. 1/3 cupHeinz Ketchup
  8. 1packette of Onion Soup mix and dip
  9. Several additions of Soul Food Seasoning and ground black pepper

Cooking Instructions

    Let the cracker Panade get moistened with the milk. Add all ingredients in the large baking pan, knead, mix, and combine all with your bare hands. Form aloaf. Let sit, covered, overnight in the fridge.

    Bake in a 350 F oven around One and one half hour. Bake uncovered for a good crust.
