A simple, spring-inspired, light, and tasty appetizer. You can prepare it well in advance and serve it at lunch or dinner time.

Wash the spinach and roughly chop it with scissors. Add salt, flour, and eggs.

Heat a little olive oil in a nonstick skillet. Pour in 2 ladlefuls of batter at a time and cook for 2 minutes on each side. Roll up and set aside.

Beat the eggs with salt in a bowl. Grease the same skillet and cook the omelets.

Make rolls by layering the spinach pancakes, omelet, and bresaola.

Roll up and cut into 1 1/4-inch pieces (about 3 cm).

Serve with balsamic vinegar.
