Mince the new onion and microwave at 700 watts for 3 minutes. Slice the sausage and mix with rice.

In a bowl, mix cake flour and butter, and microwave at 700 watts for 1 minute. Remove the bowl and beat gently. Whisk in the milk, a little at a time.

In the sauce created in step 2, mix in the onion from step 1, the rosemary, and a touch of salt.

In a gratin dish, spread out the rice and cover with the sauce from step 3. Sprinkle plenty of cheese. Cook in an oven preheated to 480F/250C until the the cheese is melted and a golden brown crust forms.
