These thin Rice noodles or Vermicelli are a quick alternative that comes to our rescue when we have had a pretty tired day at our workplace. Ingredients

35 minutes
5-6 servings
  • 800 gmRice Noodles or Vermicelli
  • 1 tspSalt
  • as neededWater
  • 700 gmboneless cubes of Chicken
  • 3minced cloves Garlic
  • 2-3 tbspOlive Oil
  • 2thinly sliced or chopped Onions
  • 2-3chopped Tomatoes or paste
  • 1/2 cupfresh Green Peas
  • 1 tspSalt or to taste
  • 1 tspPaprika powder
  • 1/2 tspCumin powder
  • 1small bunch chopped Coriander Leaves
  • 1 tbspLemon juice

Steps

    Boil a few cups of water as required with salt at first. Take it off the heat and add broken noodles to it and cover.

    Allow them to cook in that hot water for about 5 minutes and then drain. Keep that aside.

  3. 3

    Now is the time to stir fry the chicken. Add olive oil to a cooking pot. Add garlic mince to it at first. Followed by sliced red onion. Saute it for a minute and then add the chicken. I have used boneless here. Stir fry it on a low to medium-high heat.

    Add all the spices mentioned and saute until done. It doesn't take much time. Adjust salt and squeeze some lemon juice on top. Now is the time for plating, add the noodles on a serving plate.Top with the stir fried chicken and serve. Yum!
