My grandmother and mother used to prepare this whenever they had a bountiful harvest of cucumbers in their garden and had to use them up. Now I do as well.

Wring out the cucumber very well.

Ingredients

  1. 6Cucumbers (large)
  2. 2 tbspSalt
  3. 3 tbspSugar
  4. 5 tbspGrain vinegar
  5. 3 tbspGround white sesame seeds

Cooking Instructions

    Randomly peel the cucumbers (since the skin is tough).

  2. 2

    Cut the cucumbers in half lengthwise, and scoop out the seeds with a spoon.

  3. 3

    Slice the cucumbers, put into a bowl, sprinkle with salt and toss.

  4. 4

    After about 15 minutes when the cucumbers have wilted, squeeze out twice to remove the water.

  5. 5

    Add the sugar and vinegar to the squeezed out cucumbers. Taste, and add more salt if needed. Sprinkle with the sesame seeds and mix to finish.
