Spiced potatoes & cauliflower

This is a one pot, super simple, comforting dish that's ready in under 30 minutes and its full of flavour.
This recipe can be made in several ways; with only onions or only tomatoes or use no onion-tomato at all. it depends on what ingredients are available. Though I am not a big fan of tomatoes, this recipe has tomatoes, along with onions, ginger, garlic and spices! The only ingredients missing is cilantro which I substituted with parsley flakes for the garnish.
Usually, the cauliflower is blanched before cooking in the spices. This time I fried the florets and the potatoes and then added to the onion-tomato base along with the spices. If you do not want to fry the vegetables, then just add a cup of water for simmering. I used pureed tomato but you can use chopped and cook till soft and mushy.
Since I don’t eat aloo gobi (Spiced Potatoes & Cauliflower) I had to rely on husband to the honours of giving it a thumbs up or down. And he said, “This is genuinely one of the best aloo gobi you have ever made!” That’s definitely a thumbs up!

1. Heat enough oil in a wok and fry the potatoes till golden and 80% cooked. Remove.

2. In same oil fry the cauliflower till golden, about 3 minutes. Remove.

3. Leave about 2 tablespoon of oil in wok and saute onions until translucent.

4. Add the ginger-garlic paste and cook for 1 minute.

5. Add the tomato puree and the spices. Stir together and cook till oil separates.

6. Add the fried potatoes and cauliflower and mix to coat with spices.

7. Cover and simmer till vegetables are tender.

8. Serve
