Pell and clean the prawns.
Keep the shells because we gonna use for the stock and the meat for garnish. - 2
Prawn soup / bisque:
Sear the prawn shells with oil on high heat until the shells get colour..
Deglaze it with 1 cup of white wine and reduce it down. - 3
In the other pan, add 2 tbsp canola oil and cook the chopped carrot, leek and onion until they soft.

Add tomato paste and cook it for 1 minute and mix it with cooked prawn shells.

Add 1 litre of water, bay leaves, fennel seeds and salt and cook it for at least 1 hour.

When the stock is cook, strain it and cook again to reduce by half.

To finish the soup, add double cream, 80 g unsalted butter and season it with salt & pepper and squeeze of lime juice

Garlic aioli :
Mix together mayonnaise, 2 mince garlic and olive oil and set aside.

Cook the pine nut on a pan with medium heat until you get colour or bake it in the over for 5 minutes on 180ºC.

Add 60 g butter in a pan and add 1/2 finely sliced leek for a few minutes until just soft.
Add the pine nuts and season it with salt and pepper. - 11
Season the prawns meat with salt pepper and sear them very fast on high heat (1 minutes on each side) and at last season them with lime juice.

Start with few spoon of leek with peanuts,
add few cooked prawns on the top,
Few dots of garlic aioli,
Add few coriander on the top for garnish
Finish it with prawn soup/ bisque - 13
