Thinly Sliced Pork and Enoki Mushroom in Gochujang Sauce

I sometimes just want to binge-eat on a Gochujang-flavored dish. I made this with thinly sliced pork belly and enoki mushrooms that I had in the fridge, and it turned out delicious!
Please make this with thinly sliced pork belly, thigh, shoulder roast, or your favorite meat cut. You don't need to secure the rolls with toothpicks. For 2 servings. Recipe by Yumerino

Roll the enoki mushrooms in the pork slices. Cook over medium heat.

Flip the rolls over, and cook the other side.

Mix the sauce together while the rolls are cooking.

Once the pork has cooked through, add the sauce to coat.

Arrange on a plate covered in shredded cabbage, and top with mayonnaise.

Extra! Eat the pork and enoki mushroom rolls in a nabe pot!
