Banana Fritters

International Tea Day is observed annually on May 21st. As such, NGO’s interested in capacity enhancement for tea production and sustainable development get involved by having their staff showcase and share their culture’s or country’s different kinds of teas and teatime treats. Scrolling through WhatsApp status updates earlier today left me drooling and craving Malawian teatime treats as a group of friends living in Rome and affiliated with the United Nations Food and Agriculture Organization did not hold back on the posts. Banana fritters were the fastest treat I could make and boy am I happy!

Heat oil in a shallow pan, first on high heat just until hot but not smoking, then turn it down to medium while you prepare the batter

In a large bowl, mash the banana to form a paste. Whisk together with the egg, milk and sugar
- 3
Stir in the flour and baking powder until combined. Adjust batter with either more flour or milk to achieve a light drippy consistency [not too thick, not too runny]

Using a tablespoon, spoon batter into the heated oil, being careful not to overcrowd the pan

Cook until evenly golden, flipping as much as needed. Drain cooked fritters on paper towels to absorb excess oil

Enjoy with tea or warm milk
