Ingredients

  • For the crust
  • 2 1/3 cupsall-purpose flour (300 grams)
  • 3/4 cupsoftened unsalted butter (180 grams)
  • 1/2 cupplus 1 tablespoon sugar (110 grams)
  • 1whole egg and 1 egg yolk
  • 1 pinchsalt
  • 2 teaspoonsbaking powder (8 grams)
  • For the filling
  • as neededApricot jam,
  • 2apples
  • For the glaze
  • 1egg white
  • 1 cuppowdered sugar (125 grams)

    In a bowl, mix the flour, sugar, and baking powder. Pour the mixture onto a work surface and make a well in the center.

    Add the softened butter, whole egg, egg yolk (set aside the egg white for the glaze), and a pinch of salt to the center.

  3. 3

    Quickly work the ingredients together with your hands until you have a smooth dough. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

    Meanwhile, prepare the glaze. In a bowl, combine the egg white and powdered sugar. Beat with an electric mixer until smooth.

  5. 5

    After the dough has chilled, divide it into two portions.

  6. 6

    Roll out the first portion with a rolling pin and place it in a springform pan lined with parchment paper.

  7. 7

    Spread apricot jam over the crust and add the apples, cut into pieces. Roll out the second portion of dough and place it on top.

  8. 8

    Brush the top with the glaze. Using a piping bag, pipe the classic lattice pattern with apricot jam.

  9. 9

    Bake at 350°F (180°C) for 30 to 35 minutes.
