In a bowl, mix the flour, sugar, and baking powder. Pour the mixture onto a work surface and make a well in the center.

Add the softened butter, whole egg, egg yolk (set aside the egg white for the glaze), and a pinch of salt to the center.

Quickly work the ingredients together with your hands until you have a smooth dough. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Meanwhile, prepare the glaze. In a bowl, combine the egg white and powdered sugar. Beat with an electric mixer until smooth.

After the dough has chilled, divide it into two portions.

Roll out the first portion with a rolling pin and place it in a springform pan lined with parchment paper.

Spread apricot jam over the crust and add the apples, cut into pieces. Roll out the second portion of dough and place it on top.

Brush the top with the glaze. Using a piping bag, pipe the classic lattice pattern with apricot jam.

Bake at 350°F (180°C) for 30 to 35 minutes.
