Spinach and Sweet Potato Potage

I tried making a potage with nutrient-packed spinach and the natural sweetness of sweet potatoes.

Parboil the spinach, lightly squeeze excess water, and chop into 3-4 bite-sized lengths.

Peel the sweet potato, cut into bite-sized pieces, and soak in water. Mince the onion.

Add butter and olive oil in a pot, and stir-fry the onion over low heat until translucent. Sprinkle with salt and pepper. Add water, consommé, and sweet potato.

Turn up the heat to medium-high. When it starts to boil, turn down the heat to low. Simmer until a chopstick can go through the sweet potato. Skim off any scum that floats to the top.

Put the spinach from Step 1 with the ingredients boiled in the pot, add 1/3 of the milk into a blender, then blend together.

When the mixture becomes a thick paste, transfer to the previous pot and heat on low.

Add the remaining milk and mix. When it starts to bubble, it's done.
