California Farm Fresh Pesto Sauce

Pesto sauce must have been around for ages, a great way to save summer flavors all year.
We use little, so I make it fresh when the basil is growing, 2 tablespoons full, just enough for one meal. Using a mortar and pestle.
When the basil is ripe, we make a jar for the winter, using the food processor, and grow new basil indoors for cooking and drying.

Cooking Instructions

Crush nuts and garlic in olive oil with mortar and pestle.

Add chopped basil and parsley or mint leaves.
- 3
Add grated parmesan cheese and ground pepper, pound to pesto paste. Ready.

I made this upon request. Tomato sauce with baked paprika and homemade pesto genovese makes a really delicious sauce.There's no cheese in the pesto genovese, so I add it in.If you mix the paprika in the food processor for 10 seconds, some grains will remain. You can also freeze it, so when I make it, I put half in the fridge, and the rest in small batches in the freezer.I only have a juicer so I used 100ml of oil (as it doesn't blend very well). 80ml is OK if using a food processor.
