For pudina chutney:-
in a mixer, add washed pudina, green chillies, chopped onion, salt and 1/2 cup water. now grind it for 10 mins, until it forms into thick pudina chutney. now check the thickness and your green pudina chutney is ready.
for imli chutney:-
first boil khajur after removing its seeds. boil for 10 mins and also add imli and sugar and again boil it for 5 mins. now grind it for 10 mins until it forms as per your choice. now your imli chutney is ready.

In a bowl, add maida, ghee, salt and water. make a dough so that it can hold the stuffings and get fried.
in a hot pan, add 2 tbsp oil, now add Coriander seeds, ajwain, jeera, saunf, salt, red chilli powder and haldi. saute well until it smells delicious. now add boiled potatoes and green peas and saute for 2 mins. now add capsicum and paneer. cover with the lid and cook for 10 mins. now smash the stuffing mixture and add Coriander leaves. your stuffing is ready. - 3
Take a small ball shape from dough and make it into round shape so that potli samosa shape should be formed perfectly. fill 1 spoon of mixture and start making into potli shape.

With gentle hands, make the potlis and lock from all sides. while frying mixture should not come outside of the potlis. once the potlis are made. heat oil in a pan for deep frying them.

Deep fry those potlis and take them out as they turn golden brown. it shown in attached picture.

In a dish, place sliced onions, tomatoes, chopped Coriander, pudina chutney, imli chutney, lemon slices, fried potli samosa. garnish them as shown in video and picture.
