Preheat oven to 450 degrees. Line a baking sheet with foil.

Pick 2 tbsp of the fronds from the fennel tops and set aside. Cut the remaining tops and bottoms from the bulbs. Cut in half, then slice in 1/3” strips, removing and discarding the core as you go. Move fennel slices to baking sheet.

Drizzle olive oil over fennel, then sprinkle with garlic pepper and red pepper flakes. Use a spatula to toss until oil and spices are distributed evenly. Spread fennel in an even layer across sheet.

Bake for 11-15 minutes, where spots begin to char on fennel. Remove from oven, give it another toss, and bake for another 10 minutes.

Salt to taste, and sprinkle with reserved fronds. Great as stand alone side dish or serve over wilted greens. Enjoy!
