It is mango season in India. We used to get hundreds of mangoes in our home in Meenambakkam. Here in San Jose, I have to buy imported mangoes. Kesar mangoes are available here in the Super Market. Kesar mango pulp is good in color, sweet and rich in taste. Condensed milk is sweetened, so no sugar added to ice cream while making. Add sugar as desired if you want it very sweet. Preparation time is hardly 10 minutes. Froze overnight. #JS

Ingredients

prep time 10 minutes
4 servings
  • To make the ice cream:
  • 1 cup(GIR KESAR) Kesar mango pulp, organic (canned pulp)
  • 1/2 cupcondensed sweetened milk
  • 2 cupsheavy cream
  • 1 cupmilk powder
  • 1/2 cupsugar (optional)
  • To make the jelly:
  • 1 teaspoonagar agar
  • 2 cupsKesar Mango pulp
  • Garnish:
  • 1/2 cripe mango cubes
  • dessert, ice cream, jelly

Steps

prep time 10 minutes

    Prepare a checklist. Keep essentials close at hand.

    Mix the ingredients to make the ice cream in a blender. Taste. If you want it sweeter, you may add powdered sugar and whisk to avoid lumps. Transfer it to an airtight container and keep it in the freezer. It may take 3-4 hours to set. I froze it overnight.

    Remove from the freezer. Scoop out before serving and serve immediately. You may garnish with few ripe mango pieces or jelly

    To make the jelly:
    Dissolve agar agar in 1 tablespoon water in a small bowl. Add this to the bowl containing the mango pulp and mix with a spatula or spoon. Microwave it for 2 minutes.
    Take out and let cool for 15 minutes. Then cover and refrigerate. It takes about 30 minutes to set. you can cut it into pieces

    To serve: After the jelly is set, take it out of the refrigerator and cut it into small pieces with a knife. Serve with ice cream. Add as much ice cream as you like. Jelly and ice cream can be eaten separately.
