Peel -dragon fruit.Cut each fruit in half, scoop out white fruit and place it in food processor or blender and keep this part aside. Now cut magenta peel into pieces and wash well.
Boil it in 2cups of water. Drain,do not throw its water. - 2
Mix sugar in peel water and blend with, magenta boiled peel, lemon juice, and half of white fruit part (blended before).Add salt, Mixture will be quite "liquidy"..

Pour mixture into shallow dish and place in freezer. Mixture will be slushy/frozen in about 2-3 hours.
Using a fork, rake through the slushy/frozen mixture. Serve in bowls or shallow platter and garnish with mint leaves,herbs of choice,chopped fruits of choice and lemon slice. - 4
Serve immediately.
